Here is a phrase. "Such violence!" Now if you were to switch the "such" with "so".... what would that leave us with? "So violence!" Now does that make any sense? No. I don't think so. "So" can mean lots of stuff as in... "So much!" and "So cute!" "So" means something extreme. So instead of saying, "Oh that's cute" and saying "Oh that is "so" cute" It adds onto the word making the reader understand that it was EXTREMELY cute. Such means "Such gratefulness" or "Having such liberties is a gift." So, coming to my conclusion, "So" and "Such" are two COMPLETELY different words...

Well... so is used only with adjectives. For example : The girl is SO BEAUTIFUL . However, such is used with adjective + noun. For instance : She is SUCH A BEAUTIFUL GIRL.
